Ingredients
  

Noodles
  • 10 oz spaghetti or ramen noodles
  • 1 tsp salt for water
Aromatics
  • 4 cloves garlic minced
  • 2 stalks green onions chopped
  • 1 tbsp chili flakes red pepper or gochugaru
  • 1 tbsp sesame seeds
Sauce
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp rice vinegar
  • 1 tsp sugar
  • 3 tbsp neutral oil vegetable or canola

Equipment

  • Large pot
  • Heat-proof Bowl
  • Small saucepan

Method
 

  1. Boil a pot of salted water and cook noodles according to package instructions. Drain.
  2. In a heat-proof bowl, combine minced garlic, chopped green onions, chili flakes, and sesame seeds in a pile.
  3. Add soy sauce, oyster sauce, vinegar, and sugar to the bowl around the spices.
  4. Heat the neutral oil in a small pan until smoking hot.
  5. Carefully pour the hot oil over the garlic and chili mixture to sizzle the aromatics.
  6. Stir the sauce well to combine.
  7. Add the cooked noodles to the bowl and toss until evenly coated.
  8. Garnish with extra green onions and serve immediately.

Notes

Use caution when pouring hot oil. For extra protein, top with a fried egg or cooked shrimp.
