Ingredients
  

For the Chicken
  • 2 boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • salt and pepper to taste
For the Ramen
  • 4 packages instant ramen noodles discard seasoning packets
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 6 cloves garlic minced
  • 2 tbsp soy sauce
  • 2 tbsp chili paste or gochujang
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tsp sugar
For Garnish
  • 4 soft-boiled eggs halved
  • 4 scallions thinly sliced
  • dried red chili flakes
  • sesame seeds optional

Equipment

  • Grill pan or outdoor grill
  • Large Pot (for boiling)
  • Large skillet or wok
  • Mixing bowls
  • Whisk

Method
 

  1. Season chicken breasts with salt, pepper, garlic powder, and paprika. Let rest for 15 minutes at room temperature.
  2. Heat grill pan to medium-high heat and brush with olive oil. Grill chicken for 6-7 minutes per side until internal temperature reaches 165°F.
  3. Remove chicken from heat and let rest for 5 minutes before slicing against the grain into half-inch thick strips.
  4. Bring pot of water to boil for eggs. Lower eggs carefully into boiling water and cook for 6-7 minutes for jammy yolks.
  5. Transfer eggs to ice bath immediately and let sit for 5 minutes. Peel and halve just before serving.
  6. Cook ramen noodles according to package directions (3-4 minutes). Drain and rinse briefly with cold water. Set aside.
  7. In large skillet, combine chicken broth and heavy cream over medium heat. Add minced garlic and stir.
  8. Add soy sauce, chili paste, sesame oil, and sugar to cream mixture. Simmer for 3-4 minutes to meld flavors.
  9. Add cornstarch slurry while stirring constantly to prevent lumps. Continue stirring until sauce thickens, about 2-3 minutes.
  10. Add cooked ramen noodles to sauce and toss to coat evenly.
  11. Divide noodles among serving bowls. Top with sliced grilled chicken, halved soft-boiled eggs, scallions, chili flakes, and sesame seeds.

Notes

Adjust spice level by increasing or decreasing chili paste. Store components separately for meal prep. Sauce can be made ahead and reheated. For extra richness, add a tablespoon of butter to the sauce.
