Ingredients
  

Dry Ingredients
  • 2.75 cups all-purpose flour
  • 1 tbsp cornstarch
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
Wet Ingredients
  • 1 cup unsalted butter softened to room temperature
  • 1.5 cups granulated sugar
  • 1 large egg room temperature
  • 2 tsp vanilla extract
  • 0.5 tsp almond extract optional
  • 3-4 drops pink gel food coloring
Coating
  • 0.5 cup coarse sparkling sugar for rolling

Equipment

Method
 

  1. Whisk together the flour, cornstarch, baking soda, baking powder, and salt in a bowl.
  2. In a large mixer, beat the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
  3. Add the egg, vanilla extract, and almond extract. Beat until fully combined.
  4. Mix in the pink gel food coloring until the dough reaches your desired vibrant pink color.
  5. Gradually mix in the dry ingredients on low speed until just combined. Do not overmix.
  6. Cover the dough and chill in the refrigerator for at least 30 minutes.
  7. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Scoop dough into 1.5-tablespoon sized balls. Roll each ball generously in the coarse sparkling sugar.
  9. Place 2 inches apart on the baking sheets. Bake for 10-12 minutes until edges are set but centers are soft.
  10. Let cool on the baking sheet for 5 minutes before transferring to a wire cooling rack.

Notes

Adding cornstarch ensures the cookies stay thick and soft. For best results, do not skip the chilling time!
