Sparkling Raspberry Lemonade

A highly refreshing, bubbly summer beverage featuring a homemade fresh raspberry simple syrup, tart freshly squeezed lemon juice, sparkling water, and fresh mint.

Ingredients
  

Raspberry Syrup
  • 2 cups fresh raspberries
  • 1 cup granulated sugar
  • 1 cup water
Lemonade Base
  • 1.5 cups fresh lemon juice from about 8-10 lemons
  • 4 cups sparkling water chilled
Garnishes
  • 1 large lemon sliced into wheels
  • 0.5 cup fresh raspberries
  • 1 handful fresh mint sprigs
  • 4 cups ice cubes

Equipment

  • Large Glass Pitcher
  • Medium saucepan
  • Fine-mesh sieve
  • Citrus juicer

Method
 

  1. In a saucepan, combine 2 cups raspberries, sugar, and water. Bring to a boil over medium-high heat.
  2. Reduce heat to low and simmer for 5-7 minutes, gently mashing the berries to release their juices.
  3. Strain the mixture through a fine-mesh sieve into a bowl, pressing the pulp to extract all the syrup. Discard seeds and let the syrup cool.
  4. Juice the lemons to yield 1.5 cups of fresh lemon juice, removing any seeds.
  5. In a large pitcher, combine the cooled raspberry syrup and the fresh lemon juice. Stir well.
  6. Slowly pour in the chilled sparkling water and gently stir to combine.
  7. Add the lemon wheels, whole fresh raspberries, and mint sprigs to the pitcher.
  8. Fill the pitcher with ice right before serving, or pour the lemonade into individual ice-filled glasses.

Notes

For the best flavor, do not substitute bottled lemon juice for fresh. You can make the syrup up to 4 days in advance and keep it in the fridge.
