- In a medium saucepan, combine sugar, 1 cup of water, and 1 cup of halved strawberries. Bring to a gentle boil, then simmer for 10 minutes until strawberries break down.
- Strain the syrup through a fine-mesh sieve, pressing the berries to extract juice. Discard solids and let the syrup cool completely.
- In a large glass pitcher, add a handful of fresh mint leaves. Gently press and muddle them to release their aromatic oils.
- Pour the cooled strawberry syrup and fresh lemon juice into the pitcher with the mint. Stir to combine.
- Add the remaining sliced strawberries, lemon wheels, and fill the pitcher halfway with ice.
- Right before serving, slowly pour in the chilled sparkling water. Stir gently and serve in glasses over ice with pink and white striped straws.
Notes
For an adult version, add 1 cup of vodka or light rum. Store the base syrup and lemon juice in the fridge for up to 3 days before mixing.
