Sparkling Easter Strawberry Lemonade

Ingredients
  

Strawberry Simple Syrup
  • 1 cup fresh strawberries hulled and halved
  • 0.75 cup granulated sugar
  • 1 cup water
The Lemonade Base
  • 1 cup freshly squeezed lemon juice about 6-8 lemons
  • 1 cup fresh strawberries sliced, for garnish
  • 1 lemon sliced into wheels, for garnish
  • 1 bunch fresh mint leaves
  • 4 cups sparkling water or club soda chilled
  • 4 cups ice cubes

Equipment

  • Large Glass Pitcher
  • Medium saucepan
  • Fine-mesh strainer
  • Muddler or wooden spoon

Method
 

  1. In a medium saucepan, combine sugar, 1 cup of water, and 1 cup of halved strawberries. Bring to a gentle boil, then simmer for 10 minutes until strawberries break down.
  2. Strain the syrup through a fine-mesh sieve, pressing the berries to extract juice. Discard solids and let the syrup cool completely.
  3. In a large glass pitcher, add a handful of fresh mint leaves. Gently press and muddle them to release their aromatic oils.
  4. Pour the cooled strawberry syrup and fresh lemon juice into the pitcher with the mint. Stir to combine.
  5. Add the remaining sliced strawberries, lemon wheels, and fill the pitcher halfway with ice.
  6. Right before serving, slowly pour in the chilled sparkling water. Stir gently and serve in glasses over ice with pink and white striped straws.

Notes

For an adult version, add 1 cup of vodka or light rum. Store the base syrup and lemon juice in the fridge for up to 3 days before mixing.
