- In a large bowl, cream together softened butter and 0.75 cup sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
- Fold in the chopped cranberries.
- Cover and chill the dough for at least 30 minutes.
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Roll chilled dough into balls, then roll each ball in the extra sugar to coat.
- Place on baking sheets and bake for 10-12 minutes, until set around the edges. Cool on pan for 5 minutes before transferring to a wire rack.
Notes
Add 1 teaspoon of fresh orange zest to the dough with the cranberries for a delicious citrus twist. Total time includes 30 minutes of chilling.
