Sparkling Cranberry Rosemary White Sangria

Ingredients
  

Rosemary Simple Syrup
  • 0.5 cup water
  • 0.5 cup granulated sugar
  • 2-3 sprigs fresh rosemary
Sangria Base
  • 1 bottle Pinot Grigio or Sauvignon Blanc 750ml, chilled
  • 2 cups white cranberry juice or regular cranberry juice for redder color
  • 1.5 cups fresh cranberries rinsed
  • 4 sprigs fresh rosemary for infusing pitcher
To Serve
  • 2 cups sparkling water or Prosecco chilled, added just before serving
  • 1 bag ice for serving
  • 1 cup sugared cranberries optional garnish

Equipment

  • Small Saucepan (for syrup)
  • Long Stirring Spoon
  • Textured Tumblers or Wine Glasses

Method
 

  1. Make the syrup: Combine 1/2 cup sugar, 1/2 cup water, and 2 rosemary sprigs in a small saucepan. Simmer until sugar dissolves. Let steep for 15 minutes, then discard rosemary and cool.
  2. In a large pitcher, combine the chilled white wine, cranberry juice, and the cooled rosemary syrup.
  3. Stir in the fresh cranberries and extra rosemary sprigs.
  4. Refrigerate for at least 2 hours to allow flavors to meld (can be done overnight).
  5. Just before serving, top the pitcher with the sparkling water or Prosecco.
  6. Serve over ice in glasses, garnishing with sugared cranberries and a fresh rosemary sprig.

Notes

To make a non-alcoholic version, replace the wine with white grape juice or non-alcoholic sparkling wine. Using white cranberry juice preserves a lighter, pinker color, while red cranberry juice makes a deeper red drink.
