- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream together softened butter and sugar until light and fluffy.
- Beat in egg, extracts, and green food coloring until combined and desired color is reached.
- In a separate bowl, whisk together dry pudding mix, flour, baking soda, and salt.
- Gradually mix dry ingredients into wet ingredients until just combined.
- Fold in white chocolate chips and dried cranberries.
- Scoop dough into rounded balls onto prepared baking sheets.
- Bake for 9-11 minutes until edges are set but centers are still soft.
- Cool on baking sheet for 5-10 minutes before transferring to a wire rack.
Notes
For the softest texture, do not overbake. The pistachio pudding mix gives flavor and helps keep them soft. Store in an airtight container at room temperature for up to 5 days.
