Ingredients
  

Cookie Dough
  • 2.25 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 2 tsp cinnamon ground
  • 0.25 tsp nutmeg optional
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 2 eggs large
  • 1 tsp vanilla extract
Coating
  • 0.5 cup granulated sugar for rolling
  • 1 cup powdered sugar confectioners sugar

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium bowl.
  3. Cream butter, 1 cup granulated sugar, and brown sugar until light and fluffy (2-3 mins).
  4. Beat in eggs one at a time, then add vanilla. Gradually mix in dry ingredients until just combined.
  5. Chill dough in the refrigerator for at least 30 minutes to make handling easier.
  6. Scoop dough into balls. Roll first in extra granulated sugar, then generously in powdered sugar.
  7. Place on baking sheet 2 inches apart. Bake 10-12 minutes until set but soft. Cool on wire racks.

Notes

Ensure the dough is chilled properly to prevent spreading. Store in an airtight container for up to 5 days.
