- Preheat oven to 350°F (175°C). Line a 9x13 inch pan with parchment paper or grease and flour.
- Whisk together flour, baking soda, salt, and cinnamon in a medium bowl.
- Cream softened butter, granulated sugar, and brown sugar in a large bowl until light and fluffy.
- Beat in eggs one at a time, then add vanilla extract and mashed bananas, mixing until just combined.
- Gradually mix in dry ingredients until just combined (do not overmix).
- Gently fold in 3/4 cup of chocolate chips. Spread batter evenly in the prepared pan and sprinkle with the remaining 1/4 cup of chips.
- Bake for 25-30 minutes, or until a toothpick comes out clean or with moist crumbs attached.
- Cool completely on a wire rack before slicing and serving. Cooling fully is essential for a soft, chewy texture.
Notes
For best texture, use very overripe (spotty) bananas. Store bars in an airtight container at room temperature for up to 3 days.
