Soft Blackberry Sweet Rolls with Cream Cheese Glaze

Ingredients
  

Dough
  • 4 cups all-purpose flour
  • 1 packet instant yeast 2 1/4 tsp
  • 1 cup whole milk warm (110°F)
  • 0.33 cup unsalted butter melted
  • 0.5 cup sugar
  • 2 eggs large
Filling
  • 2.5 cups blackberries fresh or frozen (thawed)
  • 0.5 cup sugar
  • 1 tbsp cornstarch
Glaze
  • 4 oz cream cheese softened
  • 1.5 cups powdered sugar

  • 9x13 Baking Dish
  • Rolling pin
  • Dental floss (for cutting)

Method
 

  1. Combine warm milk, yeast, and 1 tbsp sugar. Let sit 5 mins if using active dry yeast.
  2. Mix flour, remaining sugar, salt, butter, and eggs with the yeast mixture. Knead for 5-7 minutes until soft and tacky.
  3. Let dough rise in a greased bowl, covered, for 1-1.5 hours until doubled.
  4. Mix blackberries, sugar, cornstarch, and lemon juice for the filling. Mash lightly.
  5. Roll dough into a 12x18 inch rectangle. Spread filling evenly.
  6. Roll up tightly into a log and cut into 12 rolls using dental floss or a serrated knife.
  7. Place in greased baking dish, cover, and let rise again for 30-45 minutes.
  8. Bake at 350°F (175°C) for 20-25 minutes until golden.
  9. Beat cream cheese, butter, powdered sugar, and vanilla for glaze. Spread over warm rolls.

Notes

Use dental floss to cut the rolls without squishing the dough. If using frozen berries, thaw and drain excess liquid first.
