Ingredients
  

Burrito Filling
  • 1 lb breakfast sausage ground
  • 8 large eggs
  • 4 large flour tortillas burrito size
  • 1 cup cheddar cheese shredded
Country Gravy
  • 4 tbsp sausage drippings or butter
  • 0.25 cup all-purpose flour
  • 2.5 cups whole milk warm
  • 0.5 tsp garlic powder
  • 1 tsp black pepper coarse ground

Equipment

  • Large Skillet
  • Whisk
  • Non-stick pan (for eggs)

Method
 

  1. Brown sausage in a skillet. Remove meat but keep drippings. Set aside.
  2. For gravy: Whisk flour into hot drippings/butter. Cook for 1 minute.
  3. Slowly whisk in warm milk until smooth. Simmer until thickened. Season with pepper, garlic, and salt.
  4. Scramble eggs in a separate pan until soft curds form.
  5. Fill warmed tortillas with eggs, cheese, and most of the sausage. Roll tightly.
  6. Place burritos on plate, smother with hot gravy, and top with remaining sausage and parsley.

Notes

If the gravy becomes too thick, whisk in a tablespoon of milk at a time until desired consistency is reached.
