- Place chicken breasts in a large pot, cover with water, and boil until cooked through (approx 15-20 mins). Drain and shred with forks.
- In a bowl, whisk together ketchup, honey, vinegar, smoked paprika, garlic powder, salt, and pepper.
- Pour the sauce into a skillet over medium heat. Add the shredded chicken and toss to coat. Simmer for 5-8 minutes until sauce is thick and sticky.
- Warm corn tortillas in a lightly oiled pan over medium-high heat until pliable and slightly charred.
- Assemble tacos by filling tortillas with BBQ chicken, then topping with lettuce, tomatoes, Cotija cheese, and cilantro.
- Serve immediately with fresh lime wedges.
Notes
For a spicy kick, add a pinch of cayenne pepper or chopped chipotles to the sauce. Leftover meat stores well for 4 days.
