Ingredients
  

Chicken & Sauce
  • 1.5 lbs chicken breast boneless skinless
  • 1 cup ketchup
  • 0.33 cup honey
  • 2 tbsp apple cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
Assembly
  • 12 small corn tortillas
  • 2 cups iceberg lettuce shredded
  • 1 cup tomatoes diced
  • 0.5 cup Cotija cheese crumbled
  • 0.25 cup cilantro chopped

Method
 

  1. Place chicken breasts in a large pot, cover with water, and boil until cooked through (approx 15-20 mins). Drain and shred with forks.
  2. In a bowl, whisk together ketchup, honey, vinegar, smoked paprika, garlic powder, salt, and pepper.
  3. Pour the sauce into a skillet over medium heat. Add the shredded chicken and toss to coat. Simmer for 5-8 minutes until sauce is thick and sticky.
  4. Warm corn tortillas in a lightly oiled pan over medium-high heat until pliable and slightly charred.
  5. Assemble tacos by filling tortillas with BBQ chicken, then topping with lettuce, tomatoes, Cotija cheese, and cilantro.
  6. Serve immediately with fresh lime wedges.

Notes

For a spicy kick, add a pinch of cayenne pepper or chopped chipotles to the sauce. Leftover meat stores well for 4 days.
