Method
- Cut beef into 2-inch chunks. Toss in a bowl with 1/2 cup cornstarch until evenly coated.
- Heat olive oil in a skillet over medium-high heat. Sear beef in batches until browned on all sides. Transfer to slow cooker.
- Whisk together soy sauce, water, brown sugar, ginger, garlic, and sesame oil. Pour over beef.
- Cover and cook on LOW for 7-8 hours or HIGH for 3-4 hours, until meat shreds easily.
- Remove beef and shred with two forks. Whisk cornstarch slurry into the sauce in the slow cooker.
- Cook sauce on HIGH (uncovered) for 15 minutes to thicken. Return beef to sauce.
- Cook noodles according to package instructions. Drain.
- Toss noodles with the beef and sauce. Garnish with sesame seeds and cilantro.
Notes
For a spicy kick, add 1 tsp of red pepper flakes or serve with chili crisp oil. Store leftovers in the fridge for up to 3 days.
