Silky Blackberry Sauce

Ingredients
  

  • 4 cups blackberries fresh or frozen
  • 0.33 cup granulated sugar adjust to taste
  • 1 tbsp lemon juice freshly squeezed
  • 0.25 cup water
  • 1 tsp vanilla extract
  • 1 tsp cornstarch mixed with 1 tbsp water (optional, for thicker glaze)

  • Fine-mesh sieve
  • Blender (optional)

Method
 

  1. Combine blackberries, sugar, lemon juice, and water in a medium saucepan over medium-high heat.
  2. Bring to a boil, then reduce to a simmer. Cook for 10-15 minutes, mashing the berries against the side of the pot as they soften, until broken down and syrupy.
  3. For the smoothest texture, carefully pulse the hot mixture in a blender a few times.
  4. Pour the mixture through a fine-mesh sieve set over a bowl. Firmly press the solids with a spatula to extract all the smooth purée. Discard the leftover seeds.
  5. Stir the vanilla extract into the smooth sauce. (If a thicker consistency is desired, return to heat and whisk in the optional cornstarch slurry for 2 minutes).
  6. Cool completely and store in an airtight glass jar in the refrigerator for up to 10 days.

Notes

Straining is the most important step for a luxurious, velvety texture. Do not rush pressing the pulp through the sieve. You can freeze this sauce for up to 3 months.
