  • 1.5 lbs smoked sausage (Kielbasa or Andouille) sliced into 1/2-inch rounds
  • 1.5 lbs baby potatoes halved or quartered to 1-inch size
  • 2 medium bell peppers (red and yellow) cut into 1-inch chunks
  • 2 medium zucchini sliced into thick half-moons
Seasoning
  • 3 Tbsp olive oil
  • 1.5 tsp dried oregano or Italian seasoning
  • 1 tsp garlic powder
  • 0.75 tsp kosher salt adjust to taste
  • 0.5 tsp black pepper freshly ground
  • 0.25 cup fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or foil for easy cleanup.
  2. Slice the sausage, potatoes, peppers, and zucchini into uniform pieces as noted in the ingredients list.
  3. In a large bowl, combine the sausage, vegetables, and potatoes. Drizzle with olive oil and sprinkle with oregano, garlic powder, salt, and pepper.
  4. Toss well to ensure everything is evenly coated in oil and spices.
  5. Spread the mixture in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two pans if necessary.
  6. Roast for 20 minutes. Remove from oven and flip the ingredients with a spatula for even cooking.
  7. Return to oven and roast for another 15-20 minutes until potatoes are tender and sausage edges are browned.
  8. Garnish generously with fresh chopped parsley before serving hot.

Notes

Ensure potatoes are cut small enough to cook through in the allotted time. For crispier results, do not overcrowd the baking sheet, allowing air to circulate around the food.
