Ingredients
  

Pastry and Filling
  • 2 sheets puff pastry thawed but cold (approx. 17 oz total)
  • 1.5 cups cooked ham diced small
  • 1.5 cups sharp cheddar cheese shredded
  • 2 tbsp fresh chives chopped, for filling
Topping and Assembly
  • 1 large egg beaten with 1 tbsp water for egg wash
  • 0.25 cup cheddar cheese finely shredded, for topping
  • 2 tbsp fresh chives chopped, for garnish after baking
  • 1 tsp flaky sea salt for garnish

Method
 

  1. Preheat your oven to 400°F (200°C) and line two baking sheets with parchment paper.
  2. In a bowl, mix together the diced ham, 1.5 cups shredded cheddar, and 2 tablespoons chopped chives.
  3. Unfold the cold puff pastry sheets on a lightly floured surface. Cut each sheet into 4 equal squares, totaling 8 squares.
  4. Place about 1/3 cup of the ham and cheese mixture into the center of each square.
  5. Brush the edges of the squares with egg wash. Fold over into triangles and press edges firmly with a fork to seal.
  6. Place pies on prepared baking sheets. Brush tops with egg wash and sprinkle with the remaining 1/4 cup finely shredded cheese.
  7. Bake for 20-25 minutes until deeply golden brown and puffed.
  8. Remove from oven and immediately sprinkle with remaining fresh chives and flaky sea salt. Let cool slightly before serving.

Notes

Ensure the puff pastry is cold when working with it to ensure maximum flakiness. These can be assembled and frozen before baking; add a few extra minutes to the baking time if cooking from frozen.
