Roll-Ups
  • 8 slices white sandwich bread
  • 8 breakfast sausage links cooked
  • 3 large eggs
  • 0.25 cup whole milk
  • 1 tsp ground cinnamon
  • 0.5 tsp vanilla extract
  • 2 tbsp butter for cooking
  • maple syrup for serving
  • powdered sugar optional, for dusting

Method
 

  1. Cook the breakfast sausage links according to package directions until fully cooked and browned. Set aside to cool slightly.
  2. Cut the crusts off each slice of bread. Use a rolling pin to flatten each slice until very thin and pliable.
  3. Place one cooked sausage link at one edge of each flattened bread slice. Roll the bread tightly around the sausage, pressing to seal.
  4. In a shallow dish, whisk together eggs, milk, cinnamon, and vanilla extract until well combined.
  5. Heat a large skillet over medium heat and add butter, swirling to coat the pan.
  6. Dip each roll-up in the egg mixture, turning to coat all sides. Let excess drip off.
  7. Cook roll-ups in batches, turning occasionally, until golden brown on all sides, about 2-3 minutes per side.
  8. Serve immediately with warm maple syrup for dipping or drizzling. Dust with powdered sugar if desired.

Notes

These roll-ups freeze beautifully. Cool completely, freeze on a baking sheet, then store in freezer bags for up to 2 months. Reheat in microwave, oven, or air fryer. Can be prepped the night before and refrigerated uncooked.
