Method
- Cook the breakfast sausage links according to package directions until fully cooked and browned. Set aside to cool slightly.
- Cut the crusts off each slice of bread. Use a rolling pin to flatten each slice until very thin and pliable.
- Place one cooked sausage link at one edge of each flattened bread slice. Roll the bread tightly around the sausage, pressing to seal.
- In a shallow dish, whisk together eggs, milk, cinnamon, and vanilla extract until well combined.
- Heat a large skillet over medium heat and add butter, swirling to coat the pan.
- Dip each roll-up in the egg mixture, turning to coat all sides. Let excess drip off.
- Cook roll-ups in batches, turning occasionally, until golden brown on all sides, about 2-3 minutes per side.
- Serve immediately with warm maple syrup for dipping or drizzling. Dust with powdered sugar if desired.
Notes
These roll-ups freeze beautifully. Cool completely, freeze on a baking sheet, then store in freezer bags for up to 2 months. Reheat in microwave, oven, or air fryer. Can be prepped the night before and refrigerated uncooked.
