Ingredients
  

Crust & Crumble
  • 1.5 cups all-purpose flour
  • 1 cup rolled oats
  • 0.75 cup brown sugar packed
  • 0.5 tsp salt
  • 0.75 cup unsalted butter melted
Cheesecake Layer
  • 16 oz cream cheese softened to room temp
  • 0.5 cup granulated sugar
  • 2 eggs large
  • 0.25 cup sour cream
  • 1 tsp vanilla extract
Topping
  • 1 cup fig jam or preserves
  • 2 tbsp honey warm
  • 1 pinch flaky sea salt

Equipment

  • 8x8 or 9x9 inch baking pan
  • Electric Mixer
  • Mixing bowls
  • Parchment paper

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8x8 inch pan with parchment paper.
  2. In a bowl, mix flour, oats, brown sugar, salt, and melted butter until crumbly.
  3. Press 2/3 of the crumb mixture firmly into the bottom of the prepared pan. Bake for 10 minutes.
  4. Meanwhile, beat cream cheese and granulated sugar until smooth. Add sour cream and vanilla.
  5. Beat in eggs one at a time until just combined. Pour over the baked crust.
  6. Spread fig jam gently over the cheesecake layer. Sprinkle the remaining crumb mixture on top.
  7. Bake for 30-35 minutes until the center is set but slightly wobbly. Cool completely on a rack.
  8. Refrigerate for at least 3 hours. Slice and drizzle with honey and sea salt before serving.

Notes

For cleaner slices, dip your knife in hot water and wipe it dry between cuts. Store leftovers in the refrigerator.
