  • 2 eggs large, room temp
  • 0.75 cup granulated sugar
  • 0.25 cup light brown sugar packed
  • 1 tsp vanilla extract

  • 0.5 cup all-purpose flour
  • 3 tbsp cocoa powder Dutch processed
  • 0.5 tsp baking powder
  • 0.25 tsp fine sea salt

  • 1 tbsp flaky sea salt like Maldon

Method
 

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Melt the chopped dark chocolate and butter together in a double boiler or microwave (30 second bursts). Stir until smooth and let cool slightly.
  3. In a large bowl, beat the eggs, granulated sugar, and brown sugar on medium-high speed for 5 minutes until pale and doubled in volume.
  4. Pour the cooled chocolate mixture and vanilla into the egg mixture. Mix on low speed just until combined.
  5. Sift the flour, cocoa powder, baking powder, and fine salt into the bowl. Gently fold with a spatula until no flour streaks remain.
  6. Use a cookie scoop to drop batter onto baking sheets, spacing them 2 inches apart.
  7. Bake for 10-12 minutes. The cookies should have shiny, crackly tops but still look soft in the center.
  8. Remove from oven and immediately sprinkle with flaky sea salt. Let cool on the pan for 10 minutes before moving to a wire rack.

Notes

Whipping the eggs and sugar for the full 5 minutes is crucial for creating the shiny, crackly crust. Use high-quality chocolate bars rather than chips for the best melting texture.
