Ingredients
  

Base
  • 6 cups crisp rice cereal
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar or honey
  • 1 cup light corn syrup
  • 1 tsp vanilla extract
Topping
  • 2 cups semi-sweet chocolate chips
  • 2 tbsp creamy peanut butter for melting
  • 1 tbsp flaky sea salt Maldon style

Equipment

  • 8x8 baking pan
  • Large pot
  • Parchment paper
  • Spatula

Method
 

  1. Line an 8x8-inch square pan with parchment paper and lightly grease it.
  2. In a large pot over medium heat, combine sugar and corn syrup. Stir until sugar dissolves and mixture begins to bubble. Do not overcook.
  3. Remove from heat. Stir in 1 cup peanut butter, vanilla, and salt until smooth.
  4. Add rice cereal to the pot and fold gently until evenly coated.
  5. Press mixture firmly into the prepared pan to create an even layer.
  6. Melt chocolate chips with 2 tablespoons of peanut butter in the microwave or double boiler until smooth.
  7. Spread chocolate over the cereal base. Sprinkle immediately with flaky sea salt.
  8. Allow to cool at room temperature until chocolate sets (approx 2 hours) before slicing.

Notes

Store in an airtight container at room temperature. Refrigerating can make them too hard to bite.
