Method
- Line an 8x8-inch square pan with parchment paper and lightly grease it.
- In a large pot over medium heat, combine sugar and corn syrup. Stir until sugar dissolves and mixture begins to bubble. Do not overcook.
- Remove from heat. Stir in 1 cup peanut butter, vanilla, and salt until smooth.
- Add rice cereal to the pot and fold gently until evenly coated.
- Press mixture firmly into the prepared pan to create an even layer.
- Melt chocolate chips with 2 tablespoons of peanut butter in the microwave or double boiler until smooth.
- Spread chocolate over the cereal base. Sprinkle immediately with flaky sea salt.
- Allow to cool at room temperature until chocolate sets (approx 2 hours) before slicing.
Notes
Store in an airtight container at room temperature. Refrigerating can make them too hard to bite.
