Method
- Line a baking sheet with parchment paper and arrange crackers in a single layer.
- In a microwave-safe bowl, melt unwrapped caramels and heavy cream in 15-30 second intervals until smooth.
- Spoon a dollop of melted caramel onto each cracker. Let sit for 10 minutes to firm up slightly.
- In a separate bowl, melt the chocolate and coconut oil in the microwave in 30-second intervals until completely smooth.
- Spoon the melted chocolate over the caramel layer on each cracker, spreading it slightly to coat.
- Immediately sprinkle chopped peanuts and flaky sea salt on top while the chocolate is still wet.
- Chill in the refrigerator for 15-20 minutes until the chocolate is fully set. Serve cold or at room temperature.
Notes
Store in an airtight container in the refrigerator for up to 2 weeks. Can be frozen for up to 3 months. Use pretzel snaps instead of crackers for a firmer, saltier variation.
