Ingredients
  

Base
  • 24 buttery crackers like Ritz
Caramel Layer
  • 11 oz soft caramel candies unwrapped
  • 2 tbsp heavy whipping cream
Chocolate Coating & Topping
  • 12 oz semi-sweet or dark chocolate chopped or melting wafers
  • 1 tsp coconut oil optional, for thinning chocolate
  • 0.5 cup roasted peanuts roughly chopped
  • 1 tbsp flaky sea salt like Maldon

Equipment

  • Parchment paper
  • Microwave-safe bowls
  • Spoons or small cookie scoop

Method
 

  1. Line a baking sheet with parchment paper and arrange crackers in a single layer.
  2. In a microwave-safe bowl, melt unwrapped caramels and heavy cream in 15-30 second intervals until smooth.
  3. Spoon a dollop of melted caramel onto each cracker. Let sit for 10 minutes to firm up slightly.
  4. In a separate bowl, melt the chocolate and coconut oil in the microwave in 30-second intervals until completely smooth.
  5. Spoon the melted chocolate over the caramel layer on each cracker, spreading it slightly to coat.
  6. Immediately sprinkle chopped peanuts and flaky sea salt on top while the chocolate is still wet.
  7. Chill in the refrigerator for 15-20 minutes until the chocolate is fully set. Serve cold or at room temperature.

Notes

Store in an airtight container in the refrigerator for up to 2 weeks. Can be frozen for up to 3 months. Use pretzel snaps instead of crackers for a firmer, saltier variation.
