Method
- Preheat your oven to 400°F (200°C) and line a large baking sheet with aluminum foil. Spray lightly with non-stick spray.
- Arrange the crackers in a single layer on the baking sheet, covering the entire surface without overlapping.
- In a saucepan over medium heat, melt the butter and brown sugar. Bring to a rolling boil.
- Let the mixture boil for exactly 3 minutes without stirring constantly, until it turns a deep amber color.
- Immediately pour the hot toffee evenly over the crackers and spread quickly with a spatula.
- Bake in the oven for 5 to 6 minutes. The toffee should be bubbling vigorously all over the crackers.
- Remove from oven and immediately sprinkle the chocolate chips over the hot toffee. Let stand for 2 minutes to melt.
- Spread the melted chocolate into an even layer using a spatula.
- Sprinkle generously with sea salt flakes (and nuts if using) while the chocolate is still wet.
- Cool completely at room temperature, then refrigerate for 1 hour until hard. Break into shards to serve.
Notes
Store in the refrigerator for the best texture. If the toffee separates (looks oily), whisk a teaspoon of hot water into the boiling mixture to bring it back together.
