Salted Caramel Butter Bars

Decadent bars featuring a buttery shortbread crust, a gooey salted caramel center, and a crumbly streusel topping finished with sea salt.

Ingredients
  

Shortbread Dough
  • 1 lb unsalted butter 4 sticks, room temp
  • 1.5 cups white granulated sugar
  • 1.5 cups powdered sugar
  • 1 tbsp vanilla extract
  • 4 cups all-purpose flour
Caramel Filling
  • 14 oz soft caramels 1 bag, unwrapped
  • 0.33 cup heavy cream
  • 1 tbsp flaky sea salt Maldon or similar

  • Stand Mixer or Hand Mixer
  • Parchment paper
  • Saucepan

Method
 

  1. Preheat oven to 325°F (165°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, cream together the butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Mix in the vanilla extract. Gradually add the flour until a soft dough forms.
  4. Press about half of the dough evenly into the bottom of the prepared pan. Refrigerate the remaining dough.
  5. Bake the crust for 20 minutes or until pale golden. Remove and let cool slightly.
  6. While the crust bakes, combine the unwrapped caramels and heavy cream in a saucepan over medium-low heat. Stir constantly until smooth and melted.
  7. Pour the hot caramel over the baked crust, leaving a small gap around the edges.
  8. Crumble the reserved dough over the top of the caramel layer.
  9. Bake for another 25-30 minutes until the filling is bubbly and the topping is golden brown.
  10. Remove from oven and immediately sprinkle with flaky sea salt.
  11. Allow to cool completely to room temperature before cutting into squares.

Notes

For easier cutting, chill the fully cooled bars in the refrigerator for 1 hour before slicing. Clean your knife with hot water between cuts.
