Ingredients
  

Dry Ingredients
  • 2.5 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 0.5 tsp salt
Wet Ingredients & Fruit
  • 0.5 cup unsalted butter cold and cubed
  • 1 cup buttermilk
  • 1 egg large
  • 1 tsp vanilla extract
  • 1.5 cups fresh strawberries hulled and roughly chopped
  • 3 tbsp powdered sugar for dusting

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
  3. Cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs.
  4. Gently fold the chopped strawberries into the flour mixture to coat them.
  5. In a small bowl, whisk together buttermilk, egg, and vanilla.
  6. Pour wet ingredients into the dry ingredients. Mix gently just until a shaggy dough forms. Do not overmix.
  7. Turn dough onto a floured surface, pat into a 7-inch round rustic mound, and place on the baking sheet.
  8. Score the top with an 'X' and bake for 35-45 minutes until deep golden brown.
  9. Cool completely on a wire rack, then generously dust with powdered sugar before slicing.

Notes

Do not overwork the dough, or the bread will be tough. A shaggy, messy-looking dough is exactly what you want before baking!
