- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together flour, sugar, baking soda, baking powder, and salt.
- Cut the cold butter into the dry ingredients until the mixture resembles coarse crumbs.
- Gently fold the chopped strawberries into the flour mixture to coat them.
- In a small bowl, whisk together buttermilk, egg, and vanilla.
- Pour wet ingredients into the dry ingredients. Mix gently just until a shaggy dough forms. Do not overmix.
- Turn dough onto a floured surface, pat into a 7-inch round rustic mound, and place on the baking sheet.
- Score the top with an 'X' and bake for 35-45 minutes until deep golden brown.
- Cool completely on a wire rack, then generously dust with powdered sugar before slicing.
Notes
Do not overwork the dough, or the bread will be tough. A shaggy, messy-looking dough is exactly what you want before baking!
