Ingredients
  

Tart Base
  • 1 sheet puff pastry thawed
  • 8 oz Brie cheese sliced
  • 2 pears Bosc or Anjou, sliced thin
  • 0.5 cup cranberry sauce whole berry
  • 1 tbsp fresh thyme leaves
Finish
  • 1 egg large, for wash
  • 1 tbsp water for wash
  • 1 tbsp honey optional drizzle

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Unfold puff pastry on the baking sheet. Score a 1-inch border around the edge with a knife (do not cut through) and prick the center with a fork.
  3. Arrange sliced Brie and pear slices inside the border in a rustic pattern.
  4. Dollop spoonfuls of cranberry sauce over the fruit and cheese. Sprinkle with thyme.
  5. Whisk egg and water together. Brush the pastry border with the egg wash.
  6. Bake for 20-25 minutes until the pastry is puffed and golden brown and the cheese is bubbly.
  7. Cool for 10 minutes before slicing. Drizzle with honey if desired.

Notes

Ensure the puff pastry is cold before baking for the best rise. If the dough gets too warm while assembling, pop the baking sheet in the fridge for 10 minutes before baking.
