Ingredients
  

Dough Base
  • 1.5 cups warm water 110°F
  • 1 tbsp sugar
  • 2 tsp kosher salt
  • 1 pkg active dry yeast 0.25 oz
  • 4.5 cups all-purpose flour
  • 2 oz unsalted butter melted
Stuffing & Topping
  • 8 oz sharp cheddar cheese cut into thin sticks
  • 2 tbsp fresh rosemary finely chopped
  • 1 tbsp coarse sea salt for sprinkling
  • 1 large egg beaten for wash
Boiling Solution
  • 10 cups water
  • 0.66 cup baking soda

Method
 

  1. Combine water, sugar, and salt in the bowl of a stand mixer and sprinkle yeast on top. Let sit for 5 minutes until foamy.
  2. Add flour and melted butter. Use the dough hook to mix on low speed until combined, then increase to medium and knead until smooth (approx. 5 minutes).
  3. Place dough in a greased bowl, cover with plastic wrap, and let rise in a warm place for 1 hour or until doubled in size.
  4. Preheat oven to 450°F (230°C). Bring 10 cups of water and baking soda to a rolling boil.
  5. Divide dough into 8 equal pieces. Roll each into a long rope, flatten slightly, place cheddar sticks in the center, and pinch dough around cheese to seal.
  6. Twist the stuffed ropes into a pretzel shape. Dip each pretzel into the boiling water for 30 seconds.
  7. Place on parchment-lined sheets. Brush with egg wash, sprinkle with rosemary and sea salt.
  8. Bake for 12-15 minutes until dark golden brown. Serve warm while the cheese is gooey.

Notes

Ensure the dough is pinched tightly around the cheese to prevent leaking during the boil. Pair with honey mustard for a perfect dip.
