- Preheat oven to 400°F (200°C). Toss sweet potato cubes with olive oil, smoked paprika, cumin, salt, and pepper. Roast on a baking sheet for 25-30 minutes until tender and caramelized.
- While potatoes roast, make the dressing by whisking together tahini, lemon juice, minced garlic, maple syrup, and salt. Gradually whisk in cold water until smooth and creamy.
- Place chopped kale in a large bowl. Drizzle with olive oil, lemon juice, and a pinch of salt. Massage with your hands for 2-3 minutes until soft and dark green.
- Toast chopped walnuts in a dry skillet over medium heat for 3-5 minutes until fragrant.
- Heat a grill pan or skillet over medium-high heat. Cook halloumi slices for 2-3 minutes per side until golden brown crispy.
- Add the warm roasted sweet potatoes and grilled halloumi to the massaged kale and toss gently.
- Top with toasted walnuts and drizzle generously with the tahini dressing. Serve immediately.
Notes
For a vegan version, substitute the halloumi with crispy baked tofu or chickpeas. If you don't have walnuts, pumpkin seeds or pecans are great alternatives.
