- Preheat oven to 400°F (200°C). Toss squash cubes with olive oil, salt, and pepper on a baking sheet.
- Roast squash for 25-30 minutes until tender and browned. Mash half the squash; reserve the rest for topping.
- Bring broth to a simmer in a saucepan and keep hot.
- In a large skillet, melt 2 tbsp butter. Sauté onion until soft, then add garlic cook for 1 minute.
- Add Arborio rice and toast for 2-3 minutes, stirring constantly.
- Deglaze with white wine and stir until evaporated.
- Add hot broth one ladle at a time, stirring frequently and waiting for liquid to absorb before adding more. Cook until rice is al dente (about 20 mins).
- Remove from heat. Stir in mashed squash, remaining 1 tbsp butter, Parmesan, and thyme vigorously.
- Serve immediately topped with reserved roasted squash and balsamic drizzle.
Notes
For the best texture, serve immediately. Leftovers can be reheated on the stove with a splash of extra broth to loosen the rice.
