Ingredients
  

Tart Base & Toppings
  • 1 sheet puff pastry thawed
  • 1.5 lbs butternut squash peeled and cubed
  • 2 red onions cut into wedges
  • 3 tbsp olive oil divided
  • 4 oz goat cheese crumbled
  • 1 tbsp fresh thyme
  • 1 tsp salt
  • 0.5 tsp black pepper
Optional Garnish
  • 1 tbsp honey for drizzling
  • 1 egg for egg wash

  • Parchment paper
  • Rolling pin
  • Pastry brush

Method
 

  1. Preheat oven to 400°F (200°C). Toss squash and onions separately with olive oil, salt, and pepper.
  2. Roast vegetables on a baking sheet for 20-25 minutes until tender and caramelized. Let cool.
  3. Reduce oven to 375°F (190°C). Roll out puff pastry on parchment paper. Score a border and prick the center.
  4. Arrange cooled vegetables inside the border. Top with crumbled goat cheese and thyme.
  5. Brush the border with egg wash (if using). Bake for 20-25 minutes until golden brown.
  6. Let cool slightly, then drizzle with honey and serve.

Notes

For the best flavor, use fresh thyme. You can substitute the goat cheese with feta if preferred. Vegetables can be roasted a day ahead.
