Ingredients
  

Whipped Feta Base
  • 8 oz feta cheese block drained and crumbled
  • 0.25 cup plain Greek yogurt full-fat preferred
  • 2 tbsp extra virgin olive oil
  • 1 lemon zested
Salad & Garnish
  • 1 small seedless watermelon cut into 1-inch triangular wedges
  • 0.5 cup fresh basil leaves
  • 2 tbsp balsamic glaze
  • 1 pinch flaky sea salt to taste
  • 1 pinch black pepper freshly cracked, to taste
  • 0.5 tsp red pepper flakes optional

Equipment

  • Sharp knife

Method
 

  1. In a food processor, combine feta cheese, Greek yogurt, and lemon zest. Pulse to break down.
  2. With the processor running, slowly drizzle in the olive oil and blend until smooth and creamy.
  3. Slice the watermelon into 1-inch thick triangular wedges, removing any stray seeds.
  4. Spread the whipped feta mixture onto a wide serving platter in a smooth, circular layer.
  5. Arrange the watermelon wedges over the whipped feta in a circular, slightly overlapping pattern.
  6. Garnish generously with fresh basil leaves, flaky sea salt, black pepper, and optional red pepper flakes.
  7. Drizzle with balsamic glaze right before serving. Serve immediately and enjoy!

Notes

Ensure watermelon is thoroughly chilled before assembling to keep the salad crisp and the cheese firm. Do not add salt or balsamic until immediately before serving to prevent the melon from releasing excess water.
