Ingredients
  

Fresh Peach Syrup
  • 2 cups fresh peaches pitted and diced
  • 1 cup granulated sugar
  • 1 cup filtered water
  • 1 tsp pure vanilla extract optional
Peach Iced Coffee Assembly
  • 1 cup cold brew coffee or strong chilled coffee
  • 2-3 tbsp fresh peach syrup adjust to taste
  • 0.25 cup half-and-half or heavy cream or oat milk
  • 1 cup ice cubes
  • 1 slice fresh peach for garnish

Method
 

  1. To make the syrup: In a medium saucepan, combine the diced peaches, sugar, and water. Bring to a boil over medium-high heat, stirring until sugar dissolves.
  2. Reduce heat to low and simmer for 10-15 minutes until peaches are very soft. Stir in vanilla extract.
  3. Let cool slightly, then strain through a fine-mesh sieve, pressing the peaches to extract the liquid. Let the syrup cool completely.
  4. To assemble the drink: Fill a tall glass with ice cubes.
  5. Pour 2 to 3 tablespoons of the cooled peach syrup over the ice.
  6. Pour in the cold brew coffee and stir well to mix the syrup with the coffee.
  7. Gently pour the cream or half-and-half over the top to create a swirling effect. Garnish with a fresh peach slice and serve immediately.

Notes

The peach syrup recipe makes enough for about 6-8 drinks. Store leftover syrup in an airtight jar in the refrigerator for up to 2 weeks.
