- To make the syrup: In a medium saucepan, combine the diced peaches, sugar, and water. Bring to a boil over medium-high heat, stirring until sugar dissolves.
- Reduce heat to low and simmer for 10-15 minutes until peaches are very soft. Stir in vanilla extract.
- Let cool slightly, then strain through a fine-mesh sieve, pressing the peaches to extract the liquid. Let the syrup cool completely.
- To assemble the drink: Fill a tall glass with ice cubes.
- Pour 2 to 3 tablespoons of the cooled peach syrup over the ice.
- Pour in the cold brew coffee and stir well to mix the syrup with the coffee.
- Gently pour the cream or half-and-half over the top to create a swirling effect. Garnish with a fresh peach slice and serve immediately.
Notes
The peach syrup recipe makes enough for about 6-8 drinks. Store leftover syrup in an airtight jar in the refrigerator for up to 2 weeks.
