  • 1 cup rolled oats old-fashioned oats
  • 0.5 cup pumpkin puree canned or fresh
  • 0.5 cup Greek yogurt plain or vanilla
  • 0.75 cup milk dairy or non-dairy
  • 2 tbsp maple syrup or honey
  • 2 tbsp chia seeds
  • 1 tsp vanilla extract
Spices
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.25 tsp ground ginger
  • 0.125 tsp ground cloves
  • 1 pinch salt
Optional Toppings
  • whipped cream
  • chopped pecans or walnuts
  • granola
  • pumpkin seeds
  • maple syrup drizzle

Method
 

  1. In a large mixing bowl or directly in your storage jar, combine rolled oats, pumpkin puree, Greek yogurt, and milk. Stir thoroughly until well incorporated.
  2. Add maple syrup, chia seeds, and vanilla extract to the mixture. Stir again to ensure even distribution of chia seeds.
  3. Sprinkle in cinnamon, nutmeg, ginger, cloves, and salt. Mix vigorously for at least 30 seconds to ensure spices are evenly distributed.
  4. Divide mixture evenly between 2-3 mason jars or airtight containers. Secure lids tightly.
  5. Refrigerate for at least 4 hours, though overnight (8-12 hours) is ideal for best texture and flavor development.
  6. Before serving, stir the oats well. If too thick, add a splash of milk to reach desired consistency.
  7. Top with your favorite garnishes such as whipped cream, nuts, granola, or maple syrup.
  8. Enjoy cold from refrigerator or microwave 30-60 seconds for a warm breakfast option.

Notes

Store in refrigerator for up to 5 days. Add fresh toppings just before eating. Can be frozen for up to 1 month - thaw overnight in refrigerator before serving.
