Ingredients
  

Base Mix
  • 6 cups Rice Chex cereal
  • 1.5 cups white chocolate chips divided use
  • 0.25 cup unsalted butter
  • 1 package instant pistachio pudding mix 3.4 oz box, dry
Coating & Topping
  • 1 cup powdered sugar
  • 0.5 cup shelled pistachios chopped

Equipment

  • Large mixing bowl
  • Microwave-safe bowl
  • Baking sheet
  • Gallon Ziploc bag

Method
 

  1. Measure Rice Chex cereal into a large bowl.
  2. In a microwave-safe bowl, combine 1 cup of white chocolate chips and butter. Microwave in 30-second intervals until melted and smooth.
  3. Stir the dry pistachio pudding mix into the melted chocolate mixture until fully combined.
  4. Pour the green chocolate mixture over the cereal and gently fold until evenly coated.
  5. Place powdered sugar in a large Ziploc bag. Add the coated cereal, seal, and shake until coated.
  6. Spread the mixture onto a parchment-lined baking sheet.
  7. Melt the remaining 0.5 cup white chocolate chips and drizzle over the spread cereal.
  8. Immediately sprinkle chopped pistachios over the wet drizzle. Let set for 15 minutes before serving.

Notes

Store in an airtight container for up to one week.
