Method
- Preheat oven to 350°F (175°C). Grease and flour two 8-inch or 9-inch round cake pans.
- To make the cake: Whisk together ground pistachios, flour, baking powder, and salt. In a large bowl, cream butter and sugar until fluffy. Beat in eggs one at a time, then extracts. Alternately add dry ingredients and milk, mixing until just combined.
- Divide batter between pans and bake for 25-30 minutes. Cool completely on a wire rack.
- To make the filling: Simmer raspberries, sugar, and lemon juice in a saucepan for 5-7 minutes until thickened. Cool completely.
- To make the cream: Whip heavy cream and powdered sugar to soft peaks. Add mascarpone and vanilla, and whip to stiff peaks.
- To assemble: Place one cake layer on a plate. Spread with half the raspberry filling, then a layer of mascarpone cream. Top with the second cake layer.
- Spread remaining raspberry filling on top, then pile with the rest of the cream. Garnish with a drizzle of raspberry syrup and chopped pistachios.
- Chill for at least 1 hour before slicing.
Notes
For more intense flavor, lightly toast the pistachios before grinding them. Ensure the cake layers and raspberry filling are completely cool before assembling to prevent the cream from melting.
