- Print and prepare templates for the elongated body and intricate crown frond shapes. Place them under silicone mats. Preheat oven to 300°F (150°C).
- Sift almond flour and powdered sugar together THREE times into a bowl. In a separate very clean bowl, whisk egg whites and cream of tartar to soft peaks. Gradually add granulated sugar, whisking to stiff, glossy peaks (bird's beak consistency).
- Divide the MASTER meringue batch: place 2/3 in one bowl for yellow shells, and 1/3 in another for green crowns. Color the larger batch yellow and the smaller batch green with gel coloring. Finish the macaronage (folding dry into wet) for both until the batter falls from a spatula like a continuous ribbon.
- Transfer batters to piping bags with round tips (10mm for body, finer tip for green fronds). Following templates, pipe yellow bodies and green frond shapes. Tap yellow trays firmly to release bubbles. Tap green trays less aggressively. Allow all shells to rest for 30-45 minutes until a dull skin forms.
- Bake in preheated oven. Green fronds will take 10-12 minutes, yellow bodies 14-16 minutes. Let cool completely on mats before peeling away.
- For Pineapple Buttercream: Reduce 1 cup pineapple juice in a small saucepan until thick and reduced by 80% (approx 2 tbsp). Cool completely. Cream softened butter until fluffy (3-4 mins). Sift in powdered sugar and vanilla. Fold in the cooled pineapple reduction. Whisk to a silky, stable consistency and transfer to a piping bag.
- For Decoration: Whisk royal icing ingredients for 5-7 minutes until stiff but pipeable. Transfer to fine-tip piping bag. In a cold bowl, whisk heavy cream, 1 tbsp powdered sugar, and vanilla to stiff, stable peaks and transfer to star-tipped piping bag.
- Assembly: Pipe a ring of pineapple buttercream onto 12 yellow shells, top with another yellow shell to make sandwiches. Pipe a white lattice pattern on top and allow to set. Using royal icing as 'glue', carefully attach a symmetrical cluster of green fronds to the top-back edge of each macaron. Pipe a luxurious whipped cream dollop to the top-center, complete with decorative royal icing rosettes and tiny chips, mirroring image_3.png. Serve within 4 hours.
