- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Pat the feta block completely dry with paper towels.
- Unroll the thawed phyllo dough and cover the stack with a slightly damp towel to prevent it from drying out.
- Lay one sheet of phyllo on a clean surface and lightly brush with melted butter. Place a second sheet on top and butter it. Repeat until you have a stack of 4-5 buttered sheets.
- Place the dried feta block in the center near the bottom edge of the phyllo stack.
- Fold the bottom edge over the feta, then fold in the sides. Roll the block forward until entirely wrapped like a parcel.
- Place seam-side down on the prepared baking sheet. Brush the outside generously with remaining melted butter.
- Bake for 20-25 minutes until the pastry is deeply golden brown and crispy.
- Transfer to a serving board. Immediately drizzle with hot honey and sprinkle with sesame seeds, crushed nuts, red pepper flakes, and fresh thyme. Serve warm.
Notes
Do not use pre-crumbled feta; it must be a solid block. If you don't have hot honey, you can warm regular honey in a saucepan with a pinch of chili flakes for a few minutes.
