Phyllo-Wrapped Baked Feta with Hot Honey

Ingredients
  

Feta Parcel
  • 1 block Greek feta cheese (8oz) patted completely dry
  • 4-5 sheets phyllo (filo) dough thawed
  • 0.25 cup unsalted butter melted (or olive oil)
Garnishes
  • 0.33 cup hot honey
  • 1 tbsp sesame seeds toasted
  • 1 tbsp walnuts or pistachios crushed
  • 0.5 tsp red pepper flakes optional
  • 3-4 sprigs fresh thyme leaves stripped

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Pat the feta block completely dry with paper towels.
  2. Unroll the thawed phyllo dough and cover the stack with a slightly damp towel to prevent it from drying out.
  3. Lay one sheet of phyllo on a clean surface and lightly brush with melted butter. Place a second sheet on top and butter it. Repeat until you have a stack of 4-5 buttered sheets.
  4. Place the dried feta block in the center near the bottom edge of the phyllo stack.
  5. Fold the bottom edge over the feta, then fold in the sides. Roll the block forward until entirely wrapped like a parcel.
  6. Place seam-side down on the prepared baking sheet. Brush the outside generously with remaining melted butter.
  7. Bake for 20-25 minutes until the pastry is deeply golden brown and crispy.
  8. Transfer to a serving board. Immediately drizzle with hot honey and sprinkle with sesame seeds, crushed nuts, red pepper flakes, and fresh thyme. Serve warm.

Notes

Do not use pre-crumbled feta; it must be a solid block. If you don't have hot honey, you can warm regular honey in a saucepan with a pinch of chili flakes for a few minutes.
