- Beat softened cream cheese until smooth. Add shredded cheeses, mayonnaise, jalapeño, scallions, garlic powder, salt, and pepper. Mix until thick and combined.
- Gently fold in the crumbled bacon.
- Cover and refrigerate the mixture for at least 60 minutes to firm up (mandatory).
- Line a baking sheet with parchment. Scoop mixture using a small cookie scoop (about 1.5 inches) and roll quickly into uniform balls. Place on the sheet and chill again briefly.
- Set up the breading station: one dish with flour, one with beaten eggs, and one with Panko breadcrumbs.
- Coat each ball: roll in flour (shake off excess), dip in egg wash, then roll firmly in Panko, pressing gently to adhere completely.
- Preheat oven to 400°F (200°C). Arrange coated balls on a parchment-lined sheet. Drizzle or brush generously with melted butter.
- Bake for 15-20 minutes, rotating the pan halfway through, until deeply golden brown and the cheese filling is hot and melted.
- Serve immediately with ranch dressing or jalapeño jelly.
Notes
For best results, use Panko breadcrumbs for maximum crunch. The mixture MUST be well-chilled before rolling and coating to prevent sticking. Can be frozen raw for up to 3 months; bake from frozen, adding 5-10 minutes to the cook time.
