- Pat fish fillets completely dry with paper towels and season generously with salt and pepper.
- Mix diced mango, basil, and a squeeze of lime in a small bowl for the salsa.
- Heat oil in a skillet over medium-high heat until shimmering. Sear fish for 4-5 minutes undisturbed.
- Flip fish, add 1 tbsp butter and garlic, and baste for 2-3 minutes until cooked through. Remove fish.
- In the same pan, sauté shallots for 30 seconds. Deglaze with white wine and reduce by half.
- Add heavy cream and simmer until slightly thickened.
- Reduce heat to low and whisk in cold butter cubes one at a time until smooth.
- Pour sauce into bowls, top with fish, and garnish with mango salsa and chili oil.
Notes
For a perfect crust, ensure the pan is very hot before adding the fish. Do not overcrowd the pan.
