Oven Baked Beef Tacos

A crowd-pleasing sheet pan dinner featuring crispy corn shells filled with seasoned beef and melted cheese, baked to perfection and topped with fresh veggies.

Ingredients
  

Meat Filling
  • 1 lb lean ground beef 90/10 preferred
  • 1 small yellow onion diced
  • 2 cloves garlic minced
  • 1 packet taco seasoning or 2 tbsp homemade
  • 0.5 cup tomato sauce
Assembly
  • 12 hard taco shells corn
  • 1 can refried beans optional, for base
  • 2 cups cheddar cheese freshly shredded
Toppings
  • 2 cups iceberg lettuce shredded
  • 2 roma tomatoes diced
  • 0.5 cup red onion finely diced
  • sour cream for serving

Equipment

  • Large Skillet
  • 9x13 Baking Sheet or Pan
  • Cheese grater

Method
 

  1. Preheat your oven to 400°F (200°C). Spray a 9x13 baking dish with non-stick spray.
  2. In a large skillet over medium-high heat, cook ground beef and yellow onion until beef is browned and onions are soft (approx 7 mins). Drain excess fat.
  3. Stir in minced garlic, taco seasoning, and tomato sauce. Simmer on low for 3-5 minutes until the mixture thickens slightly.
  4. Arrange taco shells in the baking dish, standing them upright. If desired, spread a small amount of refried beans on the bottom of each shell.
  5. Spoon the beef mixture evenly into the shells, then top generously with shredded cheese.
  6. Bake for 10-12 minutes, or until the cheese is melted and bubbling and shells are golden.
  7. Remove from oven and immediately top with cold lettuce, tomatoes, and red onion. Serve hot.

Notes

For extra spicy tacos, add diced jalapenos to the beef mixture. Store leftovers in an airtight container, separating toppings if possible.
