Ingredients

Fish & Marinade
  • 4 fillets cod (approx. 6 oz each) skinless, or other firm white fish
  • 1 tbsp extra virgin olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper freshly ground
  • 0.5 tsp dried oregano
Skillet Vegetables
  • 2 pints cherry tomatoes approx. 4 cups
  • 2 tbsp extra virgin olive oil
  • 4 cloves garlic thinly sliced
  • 1 pinch red pepper flakes optional
Assembly & Garnish
  • 1 lemon sliced into rounds, plus wedges for serving
  • 1 bunch fresh thyme sprigs
  • 1 tbsp extra virgin olive oil for drizzling

Equipment

  • Large Cast Iron Skillet (or oven-safe pan)
  • Tongs
  • Chef's knife
  • Cutting board

Method

  1. Preheat oven to 400°F (200°C). Place a large cast-iron skillet in the oven to heat up.
  2. Pat cod fillets dry. Brush with 1 tbsp olive oil and season with 1/2 tsp salt, 1/4 tsp pepper, and oregano.
  3. Carefully remove hot skillet from oven and place on medium-high heat on stovetop. Add 2 tbsp olive oil, tomatoes, garlic, and red pepper flakes. Sauté 3-4 minutes until tomatoes blister.
  4. Remove from heat. Push tomatoes aside. Place lemon slices in skillet and rest a cod fillet on each.
  5. Tuck thyme sprigs around fish and drizzle everything with remaining 1 tbsp olive oil.
  6. Return skillet to oven and bake for 12-18 minutes, until fish is opaque and flakes easily (145°F internal temp).
  7. Discard cooked thyme stems. Garnish with fresh thyme leaves and serve immediately with lemon wedges.

Notes

Cooking time will vary based on the thickness of your fish fillets. Serve with crusty bread, rice, or a fresh salad to complete the meal.
