Method
- Heat 2 inches of oil in a heavy pot to 375°F (190°C).
- Whisk flour, sugar, baking powder, salt, cinnamon, and nutmeg in a large bowl.
- In a separate bowl, whisk milk, eggs, melted butter, and vanilla. Stir wet ingredients into dry until just combined.
- Fold in the diced apples.
- Drop 1/4 cup portions of batter into hot oil. Fry 3-4 at a time for 2-3 minutes per side until deep golden brown.
- Remove fritters and drain on a wire rack.
- Whisk powdered sugar, milk, and vanilla for glaze. Dip warm fritters into glaze or spoon over top.
- Let glaze set slightly before serving.
Notes
Maintain oil temperature between batches to ensure fritters cook through without absorbing too much oil. Best eaten fresh.
