Method
- In a large bowl, whisk together flour, fine sea salt, instant yeast, and chopped rosemary.
- Add water and mix with a spatula until a shaggy, sticky dough forms. Cover and let rest at room temperature for 12-18 hours.
- Place a covered Dutch oven in the oven and preheat to 450°F (230°C) for 30 minutes.
- Turn dough out onto a floured piece of parchment paper. Gently shape into a ball. Let rest while the oven preheats.
- Score the top of the dough, sprinkle with flaky sea salt, and press on rosemary sprigs.
- Carefully transfer dough on parchment into the hot Dutch oven. Cover and bake for 30 minutes.
- Remove the lid and bake for another 15-20 minutes until the crust is deep golden brown.
- Cool the loaf completely on a wire rack before slicing.
Notes
The total time includes the overnight proofing. Active time is less than 20 minutes. Do not slice the bread until it is completely cool to prevent a gummy texture.
