- Place ladyfingers in a food processor and pulse until they become fine crumbs. Alternatively, crush them in a sealed bag with a rolling pin.
- In a medium bowl, beat the softened mascarpone cheese and powdered sugar until creamy and smooth.
- Add the cooled espresso, vanilla extract, and pinch of salt to the cheese mixture. Mix until fully combined.
- Fold the ladyfinger crumbs into the cheese mixture until a thick, cohesive dough forms.
- Cover the bowl and refrigerate for at least 1 hour to allow the mixture to firm up for rolling.
- Line a baking sheet with parchment paper. Scoop tablespoon-sized portions of the dough and roll them into smooth balls between your palms.
- Roll each ball in the cocoa powder until fully coated.
- Top each truffle with a pinch of dark chocolate shavings.
- Keep refrigerated until ready to serve.
Notes
For an adult version, substitute 1 tablespoon of the espresso with Marsala wine or coffee liqueur (like KahlĂșa).
