Ingredients
  

The Base
  • 8 oz mascarpone cheese softened
  • 1.5 cups ladyfingers (savoiardi) finely crushed
  • 0.25 cup powdered sugar
  • 2 tbsp strong espresso cooled
  • 1 tsp vanilla extract
  • 1 pinch salt
The Coating
  • 0.5 cup unsweetened cocoa powder Dutch-processed preferred
  • 2 tbsp dark chocolate shavings for garnish

Equipment

  • Food processor or Ziploc bag
  • Electric hand mixer
  • Baking sheet
  • Small cookie scoop

Method
 

  1. Place ladyfingers in a food processor and pulse until they become fine crumbs. Alternatively, crush them in a sealed bag with a rolling pin.
  2. In a medium bowl, beat the softened mascarpone cheese and powdered sugar until creamy and smooth.
  3. Add the cooled espresso, vanilla extract, and pinch of salt to the cheese mixture. Mix until fully combined.
  4. Fold the ladyfinger crumbs into the cheese mixture until a thick, cohesive dough forms.
  5. Cover the bowl and refrigerate for at least 1 hour to allow the mixture to firm up for rolling.
  6. Line a baking sheet with parchment paper. Scoop tablespoon-sized portions of the dough and roll them into smooth balls between your palms.
  7. Roll each ball in the cocoa powder until fully coated.
  8. Top each truffle with a pinch of dark chocolate shavings.
  9. Keep refrigerated until ready to serve.

Notes

For an adult version, substitute 1 tablespoon of the espresso with Marsala wine or coffee liqueur (like KahlĂșa).
