Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 6 tbsp unsalted butter melted
  • 0.25 cup granulated sugar
Strawberry Filling
  • 8 oz cream cheese softened to room temp
  • 14 oz sweetened condensed milk
  • 0.25 cup lemon juice freshly squeezed
  • 1 tsp vanilla extract
  • 3 oz strawberry flavored gelatin 1 small box
  • 0.5 cup boiling water
  • 1.5 cups fresh strawberries hulled and finely diced
  • 8 oz whipped topping thawed (e.g., Cool Whip)

Method
 

  1. In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until it resembles wet sand.
  2. Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie dish. Chill in the refrigerator for 30 minutes.
  3. In a small bowl, whisk the strawberry gelatin into the boiling water until fully dissolved. Set aside to cool slightly.
  4. In a large bowl, beat the softened cream cheese until smooth and fluffy. Mix in the sweetened condensed milk, lemon juice, and vanilla.
  5. Slowly beat the cooled liquid gelatin into the cream cheese mixture until completely pink and combined.
  6. Gently fold in the thawed whipped topping, followed by the diced fresh strawberries.
  7. Pour the filling into the chilled crust and smooth the top. Refrigerate for at least 4 hours, or overnight, until fully set.
  8. Before serving, pipe whipped cream on top and generously decorate with colorful sprinkles. Slice and enjoy!

Notes

Ensure your cream cheese is completely at room temperature to avoid a lumpy filling. This pie can also be frozen and served semi-frozen on a hot day!
