- In a medium bowl, mix graham cracker crumbs, melted butter, and sugar until it resembles wet sand.
- Press the crumb mixture firmly into the bottom and up the sides of a 9-inch pie dish. Chill in the refrigerator for 30 minutes.
- In a small bowl, whisk the strawberry gelatin into the boiling water until fully dissolved. Set aside to cool slightly.
- In a large bowl, beat the softened cream cheese until smooth and fluffy. Mix in the sweetened condensed milk, lemon juice, and vanilla.
- Slowly beat the cooled liquid gelatin into the cream cheese mixture until completely pink and combined.
- Gently fold in the thawed whipped topping, followed by the diced fresh strawberries.
- Pour the filling into the chilled crust and smooth the top. Refrigerate for at least 4 hours, or overnight, until fully set.
- Before serving, pipe whipped cream on top and generously decorate with colorful sprinkles. Slice and enjoy!
Notes
Ensure your cream cheese is completely at room temperature to avoid a lumpy filling. This pie can also be frozen and served semi-frozen on a hot day!
