Method
- Combine graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of a 9x13 inch dish. Freeze for 10 minutes.
- Make Marshmallow Layer: Beat softened cream cheese until smooth. Beat in marshmallow fluff. Gently fold in whipped heavy cream. The mixture should be thick, gooey, and viscous.
- Make Chocolate Layer: Whisk chocolate instant pudding mix with 3.5 cups cold milk for 2 minutes. Let stand 5 minutes until it becomes a heavy, gooey, viscous pudding.
- Layer 1: Spread half of the thick marshmallow-cream cheese mixture over the crust.
- Layer 2: Spread all of the thick chocolate pudding over the marshmallow layer.
- Layer 3: Spread the remaining half of the marshmallow-cream cheese mixture over the chocolate pudding.
- Chill: Cover and refrigerate for at least 4-6 hours, or overnight, to allow the layers to set.
- Toast Top: Just before serving, set oven broiler to HIGH. Sprinkle mini marshmallows over the top.
- Broil for 30-60 seconds, watching constantly, until marshmallows are golden brown and toasted.
- Garnish: Drizzle with chocolate sauce and serve immediately.
Notes
Chilling is absolutely essential for this dessert to set. Use slightly less milk than the pudding box calls for to ensure a thick, gooey, viscous chocolate layer. Watch the broiler *constantly* as marshmallows burn in seconds.
