Ingredients
  

Chocolate Cookie Crust
  • 24 whole chocolate sandwich cookies (Oreos) un-stuffed/whole
  • 5 tbsp unsalted butter melted
  • 1 pinch fine sea salt
Peanut Butter Filling
  • 8 oz cream cheese softened to room temperature
  • 1 cup creamy peanut butter commercial brand
  • 1 cup powdered sugar sifted
  • 1 tsp pure vanilla extract
  • 1.25 cups heavy whipping cream very cold
  • 1 cup mini chocolate chips
Topping & Garnish
  • 1 cup heavy whipping cream very cold
  • 3 tbsp powdered sugar
  • 0.5 tsp vanilla extract
  • 0.5 cup chocolate chips for sprinkling
  • 0.25 cup caramel sauce for drizzling
  • 0.25 cup chocolate syrup for drizzling

Equipment

Method
 

  1. Crush chocolate sandwich cookies into fine crumbs. Mix thoroughly with melted butter and a pinch of salt.
  2. Press the crumb mixture firmly into the bottom and sides of a 9-inch pie dish. Freeze for 15-20 minutes.
  3. Whip 1 1/4 cups of cold heavy cream until stiff peaks form. Set aside in the refrigerator.
  4. In a separate bowl, beat the softened cream cheese, creamy peanut butter, powdered sugar, and vanilla until smooth.
  5. Gently fold the whipped cream into the peanut butter mixture until fully incorporated, then fold in 1 cup of chocolate chips.
  6. Spread the filling evenly into the chilled cookie crust. Cover and refrigerate for at least 6 hours, preferably overnight.
  7. Before serving, whip the remaining 1 cup of heavy cream with 3 tablespoons of powdered sugar and vanilla. Pipe swirls onto the pie.
  8. Garnish with extra chocolate chips, and generously drizzle with caramel and chocolate sauces.

Notes

Ensure you use commercial creamy peanut butter (like Jif or Skippy) rather than natural varieties to ensure the pie sets properly.
