Base Ingredients
  • 2 cups rolled oats old-fashioned works best
  • 1 cup creamy peanut butter
  • 0.66 cup honey or maple syrup for vegan
  • 0.5 cup ground flaxseed meal optional but recommended
Flavorings
  • 0.5 cup mini chocolate chips semi-sweet or dark
  • 2 tsp vanilla extract
  • 1 pinch salt optional

Method
 

  1. Prepare a baking sheet or large plate by lining it with parchment paper.
  2. In a large mixing bowl, combine peanut butter, honey, and vanilla extract. Stir until smooth and well combined.
  3. Add the rolled oats, ground flaxseed meal, and salt. Stir vigorously until the dry ingredients are completely coated.
  4. Allow the mixture to cool slightly (if peanut butter was warm), then fold in the chocolate chips.
  5. Cover the bowl and refrigerate for 20-30 minutes. This chilling step makes the dough easier to roll.
  6. Remove from fridge. Scoop about 1 tablespoon of mixture and press firmly into your palm, then roll into a smooth ball.
  7. Place balls on the prepared baking sheet. Repeat with remaining mixture.
  8. Store in an airtight container in the refrigerator for up to 1 week.

Notes

If the mixture is too sticky to roll, chill for longer or wet your hands slightly. If too dry, add a teaspoon more honey or peanut butter.
