- In a large mixing bowl, combine the rolled oats, peanut butter, honey, vanilla extract, flaxseed (if using), and a pinch of salt.
- Stir everything together with a sturdy spoon until the mixture is thick, sticky, and well combined.
- Gently fold in the chocolate chips until evenly distributed.
- Cover the bowl and place it in the refrigerator to chill for about 30 minutes. This makes the dough easier to roll.
- Remove from the fridge. Using your hands, roll the mixture into 1-inch balls, packing them tightly so they hold their shape.
- Store the energy bites in an airtight container in the refrigerator for up to a week, or freeze for up to 3 months.
Notes
If your dough is too crumbly and dry to roll, add a little bit more peanut butter or honey. If it is too wet, add a sprinkle of extra oats.
