Ingredients
  

Dry Ingredients
  • 1 cup old-fashioned rolled oats gluten-free if preferred
  • 0.5 cup semi-sweet or dark chocolate chips mini chips work best
  • 2 tbsp ground flaxseed or chia seeds optional
  • 1 pinch sea salt
Wet Ingredients
  • 0.5 cup creamy peanut butter or nut butter of choice
  • 0.33 cup honey or maple syrup
  • 1 tsp pure vanilla extract

Method
 

  1. In a large mixing bowl, combine the rolled oats, peanut butter, honey, vanilla extract, flaxseed (if using), and a pinch of salt.
  2. Stir everything together with a sturdy spoon until the mixture is thick, sticky, and well combined.
  3. Gently fold in the chocolate chips until evenly distributed.
  4. Cover the bowl and place it in the refrigerator to chill for about 30 minutes. This makes the dough easier to roll.
  5. Remove from the fridge. Using your hands, roll the mixture into 1-inch balls, packing them tightly so they hold their shape.
  6. Store the energy bites in an airtight container in the refrigerator for up to a week, or freeze for up to 3 months.

Notes

If your dough is too crumbly and dry to roll, add a little bit more peanut butter or honey. If it is too wet, add a sprinkle of extra oats.
