- If your dates are dry, soak them in warm water for 10 minutes, then drain completely before starting.
- Place the pitted dates in a food processor and pulse until they form a sticky paste.
- Add the almond butter, cocoa powder, rolled oats, vanilla extract, and sea salt to the food processor.
- Process continuously for 1-2 minutes until the mixture comes together into a sticky dough. If it's too dry, add a teaspoon of warm water.
- Add the sliced almonds and pulse 3-4 times just to fold them in without completely pulverizing them.
- Scoop about 1 tablespoon of dough at a time and roll firmly between your palms to form smooth balls. Place on a parchment-lined plate.
- Chill the bites in the refrigerator for at least 30 minutes to firm up.
- In a small bowl, melt the dark chocolate chips and coconut oil in the microwave in 20-second increments, stirring until smooth.
- Drizzle the melted chocolate generously over the chilled energy bites. Chill for another 10 minutes to set the chocolate.
